Bishan Wate is a "Special Preparation" lot from the Guji region, sourced from the washing station of the same name. Owned by Testi Coffee, a family business led by Faysel Adham Yonis, the station collects cherries from approximately 50 smallholders farming at extreme elevations up to 2350 meters. This specific lot underwent rigorous sorting to ensure over 90% peak ripeness before a 48-hour fermentation and a 21-day slow drying period. The result is an exceptionally transparent cup with delicate aromas of apple blossom and jasmine, leading into refined notes of white peach and elderflower with a silky mouthfeel.
