This Natural Reposado lot is produced by John Alvarado at the Corazón de Jesús micro-mill, located in the high-altitude Chirripó micro-region of Brunca, Costa Rica. Growing at up to 1,950 meters, this Villa Sarchí variety undergoes a specialized fermentation process developed by the Alvarado family after months of experimentation. The Reposado (rested) method involves an initial 48-hour fermentation in sealed bags at controlled temperatures, followed by a period of slow sun-drying, and a second "wine-inspired" fermentation phase. This intensive process results in a heavy-bodied, complex cup with deep notes of prune and black sugar, accented by spicy clove aromatics and a dark cacao finish.
