The Story
Tasting Notes: Rose Petal, Pomegranate, Cocoa, Cherry Jelly.
High in the misty elevations of Sidama, between 2,100 and 2,200 meters, the smallholder farmers of Faficho Bombe produce this remarkably expressive coffee. Processed at Basha Bekele's Bombe washing station, this lot utilizes a Red Honey method—a rarity for the region—where a generous amount of mucilage is left on the parchment during drying. This technique allows the sugars to caramelize and penetrate the seed, adding a layered sweetness to the classic floral Sidama profile. The result is a cup of immense nuance, featuring delicate rose petal aromatics and a bright pomegranate acidity, grounded by a structural cocoa depth and a sweet, lingering finish of cherry jelly.
