This specific lot was processed using the Red Honey method, where a significant portion of the coffee's mucilage is left on the bean during drying, resulting in a cup with a dense, creamy body and balanced medium acidity. The profile features deep, sweet notes of cocoa nibs and the concentrated sweetness of dried pineapple, finished with a subtle, characteristic honey-process funk.
